🧑‍🍳 What You’ll Need (Ingredients):

1 kg Large green prawns (peeled & deveined, tails left on)

4-5 Garlic cloves (finely minced – don’t skimp here!)

1 Large red chilli (finely chopped, or 1 tsp chilli flakes if you like a kick)

2 Fresh lemons (one for the marinade, one for serving)

2 tbsp Olive oil (plus extra for the grill)

1 tsp Sweet paprika (for that golden colour)

Handful of fresh flat-leaf parsley (roughly chopped)

Good pinch of sea salt and cracked black pepper

Optional: A cheeky splash of butter at the end!

👉 How to Smash It (Method):

Get ‘em Marinating: In a bowl, toss your prawns with the olive oil, minced garlic, chopped chilli, paprika, the juice of half a lemon, salt, and pepper. Give it a good mix so every single prawn is coated. Let it sit in the fridge for 20-30 mins (while you fire up the grill!).

Prep the Barbie: Get your BBQ grill or flat-top ripping hot. You want that sizzle the second they hit the plate! Brush the plate with a little oil.

The Quick Cook: Toss the prawns on. Cook for about 2 minutes on the first side until they start turning that gorgeous pink and get those nice charred spots.

The Flip: Flip ‘em over, toss on your chopped parsley, and maybe a tiny knob of butter if you want to go all out. Cook for another 1-2 minutes max. (Whatever you do, don’t overcook ‘em—we want ‘em plump and juicy, not rubbery!).

The Finish: Pull them off the heat, pile them high on a platter, and squeeze the remaining fresh lemon juice all over them.

Serve ‘em up: Serve with extra lemon wedges, a bowl of garlic aioli for dipping, and watch them disappear in minutes. 🙌
